One of my clients told me about a fabulous pea pesto recipe. I somehow miss placed the link, but in my usual fashion, I threw a few things together to create my own version, and holy moly this dish was good! (And my presentation gets an A+ too don’t you think? It’s amazing what a little fresh basil and parmesan shavings will do as a garnish. Accessorize!)
This recipe really goes heavy on the frozen convenience side, for better or for worse, and it goes a little something like this:
15-20 of frozen already cooked shrimp, thawed (get ’em fresh if you can though!)
1 box of spelt or whole wheat linguine (have also made this with soba noodles, which I prefer, but don’t wanna scare off anyone)
1 16 oz bag of frozen peas, thawed
1 large garlic clove, chopped
1 cup of fresh basil, and then some as garnish
1/2-3/4 cup of shaved parmesan (the kind in the tub), and then some more as garnish (see photo)
1/3 cup olive oil
1/4 tsp of salt (and them some)
BLEND ALL OF ABOVE INGREDIENTS TOGETHER in a food processor or blender EXCEPT LINGUINE (Boil that, silly!) and SHRIMP (Saute those in olive oil)
add blended contents to hot, strained noodles and mix
place shrimp and garnish atop and serve! But only to people you really want to impress.
